Although drip irrigation improves water efficiency, it can alter soil mineral profiles and potentially affect the chile's renowned taste.

By late summer, under the hot New Mexico sun, glossy green pods are carefully hand-picked. While some are bound straight for dinner tables, others ripen into a deep red, for drying and grinding into a rich, earthy powder.
